Ingredients (6 servings):
- 2 Kilimanjaro Black Tea pyramid bags
- 3/4 cup unsalted butter
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 whole egg + 1 egg yolk
- Splash of vanilla extract
- 1 3/4 cups all-purpose flour
- 3/4 tsp baking soda
- 1 tsp salt
- Tiny pinch of tea leaves from the tea bag (optional, for sprinkling on top or in the dough so the leaves are visible)
How to make it:
- Preheat oven: Set oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Brown the butter and steep the tea: Melt the butter over low heat in a small saucepan, stirring occasionally. Do not let it bubble. Add the two tea bags and let them steep on very low heat for 3–4 minutes to infuse the butter with tea flavor.
- Remove tea bags: Take out the tea bags and let the butter cool slightly so it’s warm but not hot.
- Mix in sugars and vanilla: Stir the brown sugar, white sugar, and vanilla extract into the warm tea-infused butter until smooth.
- Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
- Form the dough: Pour the butter mixture into the dry ingredients and stir until a soft dough forms. If you want, fold in a tiny pinch of loose tea leaves so they remain visible.
- Shape cookies: Divide the dough into 6 small balls and place them on the prepared baking sheet. Flatten slightly.
- Bake: Bake for 10–12 minutes, until the edges are lightly golden.
- Cool and garnish: Let the cookies cool for 10 minutes on the baking sheet, then optionally sprinkle with extra tea leaves. Serve and enjoy!
